'The Declaration provides for protection of the appellation of origin 'Cacao Grijalva', covering green or roasted/ground cacao of the species 'Theobroma Cacao'.
The bean undergoes a fermentation process traditionally used in the Grijalva region of the State of Tabasco. The region comprises three subregions, Chontalpa, Sierra and Centro, where all of the state's production of 'Cacao Grijalva' takes place.
This cocoa, which is currently produced in the municipality of Cunduacán (Tabasco) and has its own history, is chiefly exported to countries of the European Union, where it has won quality awards.'
